Though soups are generally considered as healthy and comfortable, this fresh green soup especially loaded with lots of protein, less in carbs, packed with copious amounts of vitamins and folic acid and the excess amount of soluble and insoluble fibres is really a boon to make our dinner light and healthy.  Fresh green peas soup can simply be made by sautéing the peas along with a few garlic pods and onion for flavour and few cashews for the rich taste and then pureed to make the soup. You can serve this soup along with some garlic bread or any kind of sandwich you prefer.

Ingredients
  • 1 cup Green Peas shelled
  • 6 pods garlic
  • 7-8 no Cashews
  • 2 teaspoon Pepper powder freshly ground
  • Saly As needed
  • 1 Tablespoon Butter
Instructions
Method:
  1. The making of Fresh Green Peas Soup is, to begin with, blanching of green peas.


  2. Blanching of Peas. Whether fresh or frozen peas, it has to be kept in boiled water for one minute and then immediately transferred to ice cold water for another minute and drain it out from water and keep it aside. This blanching helps you to retain the color of the peas which gives your soup the gorgeous green color.


  3. Next heat one tablespoon of butter in a saucepan or wok under low flame and add the peeled garlic pods.


  4. Sauté it until they start browning and add the chopped onion and sauté it till it becomes translucent.


  5. And add the cashews and sauté it for few more seconds.


  6. Add in the blanched green peas and give a stir.


  7. Then add the freshly ground pepper and salt and add two cups of water.


  8. Cover it with a lid and let it boil for six to seven minutes until the green peas get cooked well.


  9. Allow the soup mixture to cool a bit and strain the peas from the water and puree it using the mixer.


  10. Once the soup is pureed, add left over vegetable broth to it and adjust the salt and pepper.


  11. You can add extra water if needed to adjust your consistency level.


  12. And also you can warm the soup just when you are ready to serve to retain the nutrient content. Continuous reheating reduces the nutrition value, hence just warming it before you are ready to serve is a great idea to preserve nutrition.


  13. Serve the hot, gorgeous green peas soup sprinkled with some chilli flakes or pepper powder on top, as per your taste.

  • And you can warm the soup just when you are ready to serve to retain the nutrient content. Continuous reheating reduces the nutrition value, hence just warming it before you are ready to serve is a great idea to preserve nutrition.
  • Serve the hot, gorgeous green peas soup sprinkled with some chilli flakes or pepper powder (or reserved boiled peas) on top, as per your taste.

Notes:

  • You can use a hand blender and blend all the ingredients to make a smooth puree even when it is warm.
  • I have squeezed some lemon juice to give it some tangy taste while serving which is completely optional.
  • Since I haven’t taken photographs while blanching the peas I could not include pictures here, which I will try to do in the future.
  • Cashews also are optional or can be replaced with almonds.
  • Or you can use fresh cream at the end to give it some creamy texture which will increase the taste and calorific value as well. Mostly I don’t prefer usage of cream in my recipes because of its high calorific nature.
